Southern Enchiladas with Sausage Gravy

These hearty Southern Breakfast Enchiladas are stuffed with fluffy scrambled eggs, savory sausage, and melty cheese, all smothered in creamy sausage gravy for the ultimate morning comfort food.

  • 8 flour tortillas
  • 6 large eggs
  • 1/2 lb breakfast sausage
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 tbsp chopped parsley (optional)

Instructions

  • 1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  • 2. In a skillet, cook breakfast sausage over medium heat until browned; remove and drain.
  • 3. In the same skillet, sauté onions until soft, then add beaten eggs and scramble until just set.
  • 4. Stir in sausage and half the cheese; remove from heat.
  • 5. Spoon the egg mixture evenly into tortillas, roll tightly, and place seam-side down in the baking dish.
  • 6. In a saucepan, melt butter and whisk in flour to form a roux.
  • 7. Gradually whisk in milk and cook until thickened.
  • 8. Season with salt, pepper, paprika, and garlic powder to make sausage gravy.
  • 9. Pour the gravy evenly over enchiladas and top with remaining cheese.
  • 10. Bake uncovered for 20–25 minutes, until bubbly and golden.
  • 11. Garnish with parsley before serving.

Notes

  • You can prepare the enchiladas the night before and bake in the morning.
  • Substitute sausage with bacon or turkey sausage for a lighter version.
  • Serve with a side of fruit or hash browns for a full Southern breakfast.
