3 cups fresh peaches, peeled and diced,
2 cups all-purpose flour,
3/4 cup granulated sugar,
1/3 cup packed brown sugar,
1/2 cup unsalted butter, melted,
2 large eggs, room temperature,
1 cup buttermilk,
2 teaspoons baking powder,
1/2 teaspoon baking soda,
1 teaspoon ground cinnamon,
1/4 teaspoon nutmeg,
1/2 teaspoon vanilla extract,
1/2 teaspoon salt,
2 tablespoons flour (for coating peaches)
Instructions
Preheat oven to 350°F. Grease 9×5-inch loaf pan with butter and dust with flour. Prepare peaches by peeling, dicing, and tossing with 2 tablespoons flour.
In large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In separate bowl, cream melted butter with both sugars. Add eggs one at a time, then vanilla and buttermilk.
Gently fold dry ingredients into wet ingredients just until combined. Carefully fold in flour-coated peaches.
Pour batter into prepared pan. Bake 55-65 minutes until toothpick inserted in center comes out with few moist crumbs.
Cool in pan 10 minutes, then turn out onto wire rack. Cool completely before slicing, about 1 hour.
