Spanish Beans & Eggs

Hearty Spanish Beans & Eggs is a nourishing one-pan meal featuring white beans, aromatic tomatoes, smoked paprika, onions, and perfectly cooked eggs. Ideal for breakfast, brunch, or a cozy dinner.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1/2 onion, finely diced
  • 4 cloves garlic, sliced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon sweet smoked paprika
  • 1 can (19 oz) white beans, drained and rinsed
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • Sea salt & black pepper to taste
  • 4 large eggs

Instructions

  • 1. Heat olive oil in a large skillet over medium heat. Add onion and garlic; sauté until softened, about 3 minutes.
  • 2. Stir in smoked paprika for 30 seconds, then add diced tomatoes, parsley, chives, salt, and pepper. Simmer 2 minutes.
  • 3. Add white beans; combine well and simmer about 3 minutes.
  • 4. Create four pockets in the beans. Crack eggs one at a time into each pocket.
  • 5. Season eggs with salt and pepper. Cover skillet and cook 2 minutes. Uncover and cook another 2-4 minutes until egg whites are set but yolks are runny.
  • 6. Sprinkle with extra herbs and serve immediately with crusty bread.

Notes

  • Use any favorite white beans (cannellini, butter, great northern).
  • Add chopped spinach or bell pepper for extra veggies.
  • Delicious with crusty bread or warm pita. For spicier flavor, use a pinch of hot paprika.
