  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • For topping: 1/4 cup melted butter and 1/2 cup cinnamon sugar mixture

Instructions

  • 1. In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
  • 2. In another bowl, whisk together buttermilk, egg, melted butter, and vanilla.
  • 3. Combine wet and dry ingredients until just mixed; do not overmix.
  • 4. Heat a griddle or non-stick pan over medium heat.
  • 5. Pour 1/4 cup batter for each pancake, cook until bubbles form on top, about 2-3 minutes.
  • 6. Flip and cook 1-2 more minutes until golden.
  • 7. Brush warm pancakes with melted butter and sprinkle generously with cinnamon sugar.
  • 8. Serve immediately, stacking for best cinnamon sugar coverage.

Notes

  • Use fresh buttermilk or add vinegar to milk as substitute.
