Spatchcock Chicken

A quick and flavorful method to prepare a whole roast chicken that results in crispy skin and juicy meat.

Ingredients

  • 1 whole chicken
  • Salt
  • Pepper
  • Olive oil
  • Garlic powder
  • Paprika
  • Herbs (such as thyme or rosemary)

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Prepare the chicken breast-side down on a cutting board.
  3. Remove the backbone using kitchen shears or a sharp knife.
  4. Flatten the chicken by pressing down on the breastbone.
  5. Dry the chicken using paper towels.
  6. Season the chicken with olive oil, salt, pepper, garlic powder, paprika, and herbs.
  7. Place the chicken skin-side up on a roasting pan.
  8. Roast the chicken for 45-50 minutes until the internal temperature reaches 165°F (74°C).
  9. Rest the chicken for about 10 minutes before carving.

Notes

Serve with sides such as roasted vegetables or salads. Leftovers can be used in salads or sandwiches.
