- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 large eggs
- 1/2 cup reduced apple cider
- 1/4 cup milk
- 1 tsp vanilla extract
- Topping: 2 tbsp melted butter + 1/4 cup sugar + 1 tsp cinnamon
- 1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
- 2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- 3. In a separate bowl, cream butter and brown sugar until fluffy.
- 4. Beat in eggs one at a time, then add vanilla.
- 5. Mix in reduced apple cider and milk until smooth.
- 6. Gradually fold in dry ingredients until just combined.
- 7. Pour batter into prepared loaf pan and bake 45–50 minutes, until a toothpick comes out clean.
- 8. Cool loaf for 10 minutes, then brush with melted butter and sprinkle with cinnamon sugar topping.
- 9. Slice and enjoy warm or at room temperature.
Notes
- For extra apple flavor, add finely diced apple to the batter.
- Be sure to reduce the apple cider for a stronger flavor.
