Spiced Apple Cider Donut Loaf: The Perfect Fall Comfort Dessert

A moist and cozy spiced loaf cake infused with apple cider and warm spices, topped with a cinnamon-sugar coating for that classic apple cider donut flavor in loaf form.

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup reduced apple cider
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • Topping: 2 tbsp melted butter + 1/4 cup sugar + 1 tsp cinnamon

Instructions

  • 1. Preheat oven to 350°F (175°C). Grease and line a loaf pan.
  • 2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  • 3. In a separate bowl, cream butter and brown sugar until fluffy.
  • 4. Beat in eggs one at a time, then add vanilla.
  • 5. Mix in reduced apple cider and milk until smooth.
  • 6. Gradually fold in dry ingredients until just combined.
  • 7. Pour batter into prepared loaf pan and bake 45–50 minutes, until a toothpick comes out clean.
  • 8. Cool loaf for 10 minutes, then brush with melted butter and sprinkle with cinnamon sugar topping.
  • 9. Slice and enjoy warm or at room temperature.

Notes

  • For extra apple flavor, add finely diced apple to the batter.
  • Be sure to reduce the apple cider for a stronger flavor.
  • Loaf keeps well for 3 days at room temp or can be frozen.
