  • Beef Stir-Fry:

  • 1 red bell pepper (sliced thin)
  • 1 cup snap peas
  • 2 green onions (sliced)
  • 2 tbsp vegetable oil
  • Toasted sesame seeds

  • Spicy Garlic Sauce:
  • ⅓ cup low-sodium soy sauce
  • ¼ cup chicken broth
  • 2 tbsp hoisin sauce
  • 2 tbsp chili garlic sauce (adjust heat)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch + 2 tbsp water
  • 1 tsp sesame oil
  • Rice Bowl:
  • 2 cups cooked jasmine rice (steamy hot)
  • Fried garlic (garnish)

 

Instructions

  • 1. Mix sauce ingredients (except cornstarch slurry). Set aside.
  • 2. Heat wok/high-sided skillet over high heat. Add 1 tbsp oil.
  • 3. Crumble ground beef. Cook 2 mins undisturbed for crispy bits. Break up, cook until browned. Remove.
  • 4. Add remaining oil, garlic, ginger, chilies. Stir-fry 30 seconds fragrant.
  • 5. Add bell pepper, snap peas. Stir-fry 2 mins crisp-tender.
  • 6. Return beef. Pour sauce. Simmer 1 min.
  • 7. Stir cornstarch slurry. Cook until thickened/clingy.
  • 8. Serve over steamy jasmine rice. Garnish green onions, sesame, fried garlic.

Notes

  • High heat + don’t crowd pan = restaurant wok hei.
  • 85/15 beef = crispy bits + flavor. Drain excess if needed.
  • Thai chilies = authentic heat. Sriracha paste works too.
  • Steamy rice essential – jasmine > basmati for stickiness.
  • Fried garlic: slice thin, fry 325°F until golden. Store jar.
  • Make ahead: cook beef/veggies, store sauce separate.
