Spinach Mac and Cheese Recipe

  • 12 oz elbow macaroni or pasta of choice
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella or Gruyère cheese
  • 2 cups fresh spinach, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika (optional)
  • 1/4 cup grated Parmesan (optional, for topping)

Instructions

  • 1. Cook pasta according to package instructions until al dente. Drain and set aside.
  • 2. In a large saucepan, melt butter over medium heat.
  • 3. Whisk in flour and cook for 1 minute to form a roux.
  • 4. Slowly whisk in milk and cream until smooth.
  • 5. Cook, stirring constantly, until sauce thickens, about 4–5 minutes.
  • 6. Stir in cheddar and mozzarella until melted and smooth.
  • 7. Season with garlic powder, salt, pepper, and paprika if using.
  • 8. Add chopped spinach and cook 1–2 minutes until wilted.
  • 9. Fold in cooked pasta until fully coated.
  • 10. Top with Parmesan if desired and serve warm.

Notes

  • Use frozen spinach if needed—thaw and squeeze dry first.
  • Add crispy bacon or mushrooms for extra flavor.
  • Bake at 375°F (190°C) for 15 minutes with breadcrumbs for a baked version.
