Strawberry Cheesecake Bars

Delicious strawberry cheesecake bars with a creamy filling and a crunchy graham cracker crust. Perfect for gatherings or a sweet treat anytime!

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Combine graham cracker crumbs with melted butter until evenly coated.
  3. Press the crumb mixture into the bottom of the baking dish to form the crust.
  4. Beat softened cream cheese until smooth, then add sugar and vanilla, mixing well.
  5. Add eggs one at a time to the cream cheese mixture, mixing well after each.
  6. Pour the cream cheese mixture over the crust and smooth the top.
  7. Bake for 25-30 minutes until set but slightly jiggly in the center.
  8. Cool at room temperature, then refrigerate for at least 2 hours.
  9. Combine sliced strawberries with strawberry jam to create the topping.
  10. Spread the strawberry topping over the chilled bars and cut into squares before serving.

Notes

Use room temperature ingredients for a smoother filling. Don’t overmix to prevent cracks.
