  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries, finely chopped
  • 1/2 cup strawberry preserves
  • Fresh strawberries for garnish

Instructions

  • 1. Line a mini muffin tin with paper liners.
  • 2. Mix graham cracker crumbs and melted butter until combined.
  • 3. Press mixture firmly into the bottom of each liner.
  • 4. In a bowl, beat cream cheese until smooth.
  • 5. Add powdered sugar and vanilla extract; mix until creamy.
  • 6. Fold in chopped strawberries.
  • 7. Spoon cheesecake mixture over crusts and smooth the tops.
  • 8. Add a small dollop of strawberry preserves on each and swirl gently.
  • 9. Refrigerate for at least 2 hours until set.
  • 10. Garnish with fresh strawberries before serving.

Notes

  • Use a food processor for evenly crushed graham crackers.
  • Swap strawberries for raspberries or blueberries if desired.
  • Store chilled in an airtight container for up to 3 days.
