Strawberry Chicken

A delightful dish combining juicy chicken with the sweet burst of strawberries, perfect for a light dinner or special occasion.

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 1 tablespoon water (extra if mixture is too thick)
  • ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)

Instructions

  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt on both sides and place them in the pan. Cook for about 4-5 minutes on one side or until a nice golden crust forms.
  3. Flip the chicken and cook for another 4-5 minutes or until fully cooked through.
  4. Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  5. When the chicken is almost done, pour the mixture over the chicken, nestling it into the sauce and scraping up the brown bits on the bottom of the pan.
  6. Reduce heat and bring the sauce to a simmer, letting it bubble for 2-3 more minutes until reduced and thickened. Stir in most of the basil and simmer for 1 minute.
  7. Remove chicken breasts from the pan. Pour sauce over and sprinkle with goat cheese if desired, garnishing with remaining basil and sliced strawberries.

Notes

For even cooking, ensure chicken breasts are of equal thickness. Adjust the strawberry jam for desired sweetness. Substitute goat cheese with feta if preferred.
