Strawberry Cookies

Soft chewy Strawberry Cookies bursting with fresh strawberry flavor, white chocolate chips, and a hint of vanilla. Perfect pink-hued treat for summer baking or Valentine’s Day.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup finely chopped fresh strawberries (patted dry)
  • 1/2 cup white chocolate chips
  • Pink food coloring (optional)
  • Coarse sugar for rolling

Instructions

  • 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • 2. Whisk together flour, baking powder, and salt. Set aside.
  • 3. Beat butter and sugar until fluffy. Add egg and vanilla.
  • 4. Gently fold in chopped strawberries and white chocolate chips. Add a few drops pink food coloring if desired.
  • 5. Scoop tablespoon-sized dough balls, roll in coarse sugar, and place on baking sheets.
  • 6. Bake 10-12 minutes until edges are set. Cool on sheet 5 minutes, then transfer to wire rack.

Notes

  • Pat strawberries very dry to avoid soggy cookies.
  • Chill dough 30 minutes if too soft.
  • Perfect with strawberry cream cheese frosting.
  • Store airtight up to 3 days.
