- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped fresh strawberries (patted dry)
- 1/2 cup white chocolate chips
- Pink food coloring (optional)
- Coarse sugar for rolling
- 1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- 2. Whisk together flour, baking powder, and salt. Set aside.
- 3. Beat butter and sugar until fluffy. Add egg and vanilla.
- 4. Gently fold in chopped strawberries and white chocolate chips. Add a few drops pink food coloring if desired.
- 5. Scoop tablespoon-sized dough balls, roll in coarse sugar, and place on baking sheets.
- 6. Bake 10-12 minutes until edges are set. Cool on sheet 5 minutes, then transfer to wire rack.
Notes
- Pat strawberries very dry to avoid soggy cookies.
- Chill dough 30 minutes if too soft.
- Perfect with strawberry cream cheese frosting.
- Store airtight up to 3 days.
