  • 6 cups mixed greens or baby spinach
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup sliced almonds or walnuts, toasted
  • 1/4 small red onion, thinly sliced
  • Dressing:
  • 3 tbsp olive oil
  • 1 1/2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  • 1. Add mixed greens to a large salad bowl.
  • 2. Top with sliced strawberries, feta cheese, toasted nuts, and red onion.
  • 3. In a small bowl or jar, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  • 4. Drizzle dressing over the salad just before serving.
  • 5. Toss gently and serve immediately.
