A light and refreshing strawberry Jello poke cake made with fluffy white cake, strawberry gelatin soaked throughout, and topped with a creamy whipped topping a classic crowd-pleasing dessert.

  • 1 box (3 oz) strawberry Jello
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 container (8 oz) whipped topping, thawed
  • Fresh strawberries for garnish (optional)

Instructions

  • 1. Prepare and bake the white cake according to package directions in a 9×13-inch pan.
  • 2. Allow cake to cool slightly, then poke holes all over using the handle of a wooden spoon.
  • 3. In a bowl, dissolve strawberry Jello in boiling water.
  • 4. Stir in cold water.
  • 5. Pour Jello mixture evenly over the cake, making sure it fills the holes.
  • 6. Refrigerate cake for at least 2 hours until set.
  • 7. Spread whipped topping evenly over the cake.
  • 8. Garnish with fresh strawberries if desired and serve chilled.

Notes

  • For extra strawberry flavor, use strawberry cake mix instead of white.
