Strawberry Matcha Cookies

  • 1 cup all-purpose flour
  • 1/2 cup matcha powder
  • 1/2 cup freeze-dried strawberries, crushed
  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter, granulated sugar, and brown sugar together until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until blended.
  4. Mix the dry ingredients (flour, matcha, baking soda, salt) in a separate bowl.
  5. Combine the dry ingredients into the wet mixture, mixing gently.
  6. Fold in the crushed freeze-dried strawberries.
  7. Scoop spoonfuls of dough onto a lined baking sheet.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Dust with powdered sugar for an extra touch or serve with fresh strawberries.
