Strawberry Mochi

Delightful strawberry mochi combining sweet strawberries with a chewy, gluten-free texture.

  • 1 cup sweet rice flour (glutinous rice flour)
  • 1/4 cup sugar
  • 1/2 cup water
  • Fresh strawberries, hulled
  • Cornstarch (for dusting)
  • Optional: sweetened red bean paste

Instructions

  1. Prepare the ingredients by gathering all items and ensuring strawberries are hulled.
  2. Combine sweet rice flour and sugar in a large mixing bowl, then slowly add water to achieve a smooth batter.
  3. Transfer the mixture to a microwave-safe dish, cover, and microwave for 1 minute, stirring between intervals.
  4. Dust a clean surface with cornstarch, then pour the hot mochi mixture onto it and allow to cool slightly.
  5. Divide the mochi into small golf ball-sized pieces, flatten each piece and place a strawberry in the center.
  6. Fold the edges of the mochi over the strawberry and pinch to seal completely.
  7. Dust finished mochi with cornstarch and arrange on a plate to serve.

Notes

Best served fresh. You can pair with sweet red bean paste, honey, or chocolate for added flavor.
