Strawberry Scones

Delightful, light, and flaky strawberry scones perfect for breakfast or a sweet snack.

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, hulled and diced
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add cold butter: Cut the cold butter into small cubes, add to the dry ingredients, and mix until it resembles coarse crumbs.
  4. Fold in strawberries: Gently fold in the diced strawberries to ensure even distribution.
  5. Combine wet ingredients: In another bowl, mix together the buttermilk, egg, and vanilla extract.
  6. Combine wet and dry: Pour the wet ingredients into the dry ingredients and mix gently until just combined.
  7. Turn out the dough: Lightly flour your work surface and turn out the dough, kneading gently a few times.
  8. Shape the dough: Pat the dough into a circle about 1-inch thick and cut into wedges or use a round cutter.
  9. Prepare for baking: Place scones on the prepared baking sheet, giving them space to spread.
  10. Bake: Bake for 15-20 minutes or until golden brown on top.
  11. Make the glaze: While baking, whisk together powdered sugar and lemon juice until smooth.
  12. Glaze the scones: Drizzle the glaze over warm scones after baking and let cool before serving.

Notes

Serve warm with tea or coffee, and great with butter or cream cheese. Can be stored in an airtight container for up to 2 days at room temperature.
