  • 32 oz cream cheese, room temperature,
  • 1 cup granulated sugar,
  • 4 large eggs,
  • 1/2 cup sour cream,

  • 2 cups fresh strawberries, chopped,
  • 1/2 cup granulated sugar (for strawberry swirl),
  • 2 tablespoons cornstarch,
  • 1 tablespoon lemon juice

Instructions

  • Preheat oven to 325°F. Mix graham cracker crumbs with melted butter and press into springform pan. Bake 10 minutes.
  • Cook strawberries with sugar, cornstarch, and lemon juice until thickened. Cool completely.
  • Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in sour cream and vanilla.
  • Pour batter over crust. Drop spoonfuls of strawberry mixture on top and swirl with knife. Bake 55-60 minutes.
