Street Corn Creamy Cucumber Salad

A delightful twist on classic street corn flavors, this salad incorporates fresh cucumbers and a creamy dressing, perfect for summer picnics and barbecues.

  • 2 cups corn (fresh or canned)
  • 2 cups cucumbers, diced
  • 1 cup cooked chicken, shredded
  • 1 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Prepare the vegetables: Wash cucumbers, slice in half lengthwise and dice. Set aside. If using fresh corn, slice kernels off the cob. If using canned, drain and rinse.
  2. Combine the corn, diced cucumbers, and shredded chicken in a large bowl. Stir gently to mix.
  3. Mix the dressing: In a separate bowl, whisk Greek yogurt, lime juice, chili powder, salt, and pepper until smooth.
  4. Combine the dressing with the corn, cucumber, and chicken mixture. Toss until everything is coated.
  5. Garnish with cilantro if desired, and chill the salad for at least 30 minutes to let flavors meld.
  6. Serve chilled, and enjoy as a light meal or side dish.

Notes

For the best flavor, use fresh corn and chill before serving. Can be made a day in advance.
