- 1/2 cup shredded cheddar cheese
- 2 tbsp butter, melted
- 1/4 cup milk
- 1/4 tsp garlic powder
- 1/4 tsp black pepper
- 1/4 tsp salt
- Filling:
- 1/2 cup cooked bacon bits or diced ham
- 1/4 cup shredded mozzarella
- 2 tbsp chopped chives or green onions
- 1. Preheat oven to 400°F (200°C) and grease a muffin tin.
- 2. In a bowl, mix mashed potatoes with melted butter, milk, garlic powder, salt, and pepper.
- 3. Spoon mixture into muffin cups and use a spoon to press the center down, forming nests.
- 4. Bake for 15–20 minutes or until the edges are golden and crisp.
- 5. Remove from oven and fill each nest with bacon, mozzarella, and cheddar.
- 6. Return to oven and bake 5–7 minutes until cheese is melted.
- 7. Top with chopped chives or green onions before serving.
Notes
- Use leftover mashed potatoes for a quick version.
