Stuffed Salmon with Spinach & Feta

A delicious and healthy dish made with tender salmon, savory spinach, and creamy feta cheese, perfect for busy weeknights or impressing guests.

Ingredients

  • 4x 6-ounce pieces of salmon (approximately 170 grams each)
  • 2 Tbsp olive oil (divided)
  • 3 cups baby spinach, packed
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • A pinch of cayenne pepper
  • Approximately 5.3 ounces block of feta cheese (around 150 grams)
  • 1/4 cup parmesan, freshly grated
  • 1/4 cup jarred roasted red peppers (chopped into small pieces)
  • Salt + pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Place the salmon pieces onto the prepared baking sheet, skin-side down, and slice down the middle lengthwise without cutting all the way through.
  4. Brush the salmon fillets with 1 tablespoon of olive oil and season with salt and pepper.
  5. Add the remaining tablespoon of olive oil to a large pan over medium heat.
  6. Sauté the spinach with Italian seasoning, paprika, cayenne pepper, and additional salt and pepper until wilted.
  7. Turn off the heat and add the chopped roasted red peppers, crumbled feta cheese, and grated parmesan to the spinach.
  8. Stuff each salmon fillet with the spinach and feta mixture.
  9. Place the salmon in the oven and bake for 12 to 17 minutes until cooked through.
  10. Serve hot, optionally with sides like quinoa or salad.

Notes

For a heartier meal, serve with steamed asparagus or roasted vegetables. Store leftovers in airtight containers for up to 2 days.
