  • 2 lbs boneless skinless chicken breasts
  • 1 (20 oz) can pineapple chunks (with juice)
  • 1/3 cup brown sugar
  • 1/3 cup soy sauce
  • 2 tbsp ketchup
  • 2 garlic cloves, minced
  • 1/2 tsp ground ginger
  • 1/4 tsp black pepper
  • 2 tbsp cornstarch (optional, for thickening)
  • Cooked rice, for serving
  • Green onions, for garnish
  • Sesame seeds, optional

Instructions

  • 1. Place chicken breasts in the bottom of the crockpot.
  • 2. Add pineapple chunks with juice on top.
  • 3. Whisk together brown sugar, soy sauce, ketchup, garlic, ginger, and pepper.
  • 4. Pour sauce over the chicken.
  • 5. Cover and cook on LOW for 4–6 hours or HIGH for 2–3 hours.
  • 6. Remove chicken and shred or slice.
  • 7. (OPTIONAL) To thicken the sauce: whisk cornstarch with 2 tbsp water, stir into crockpot, and cook 10–15 minutes.
  • 8. Return chicken to the sauce and stir.
  • 9. Serve over rice and garnish with green onions and sesame seeds.

Notes

  • Use chicken thighs instead of breasts for a richer flavor.
  • Add red chili flakes for a sweet-spicy kick.
  • Serve with coconut rice for extra Hawaiian flavor.
