- 2 medium sweet potatoes, peeled and grated
- 2 tbsp all-purpose flour (or cornstarch for gluten-free)
- 1 egg, lightly beaten
- 1/2 small onion, grated
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
- 2 tbsp olive oil or butter for frying
- 1. Peel and grate the sweet potatoes, then squeeze out excess moisture using a kitchen towel.
- 2. In a bowl, mix grated sweet potatoes, onion, flour, egg, salt, pepper, and paprika until well combined.
- 3. Heat oil in a nonstick skillet over medium heat.
- 4. Scoop small portions of the mixture into the skillet and flatten into patties.
- 5. Cook 3–4 minutes per side until crispy and golden brown.
- 6. Remove and place on a paper towel-lined plate to drain.
- 7. Serve warm with eggs, avocado, or your favorite dip.
Notes
- For extra crispiness, make sure to squeeze out as much water as possible from the grated sweet potatoes.
- You can bake them at 400°F (200°C) for a lighter version.
- Great with sour cream, hot sauce, or ketchup.
