Sweet Potato Hash Browns

Crispy, golden Sweet Potato Hash Browns that are perfectly seasoned and pan-fried for a delicious, naturally sweet and savory breakfast or brunch side.

  • 2 medium sweet potatoes, peeled and grated
  • 2 tbsp all-purpose flour (or cornstarch for gluten-free)
  • 1 egg, lightly beaten
  • 1/2 small onion, grated
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 2 tbsp olive oil or butter for frying

Instructions

  • 1. Peel and grate the sweet potatoes, then squeeze out excess moisture using a kitchen towel.
  • 2. In a bowl, mix grated sweet potatoes, onion, flour, egg, salt, pepper, and paprika until well combined.
  • 3. Heat oil in a nonstick skillet over medium heat.
  • 4. Scoop small portions of the mixture into the skillet and flatten into patties.
  • 5. Cook 3–4 minutes per side until crispy and golden brown.
  • 6. Remove and place on a paper towel-lined plate to drain.
  • 7. Serve warm with eggs, avocado, or your favorite dip.

Notes

  • For extra crispiness, make sure to squeeze out as much water as possible from the grated sweet potatoes.
  • You can bake them at 400°F (200°C) for a lighter version.
  • Great with sour cream, hot sauce, or ketchup.
