  • 1 cup cold unsalted butter, cubed,
  • 68 tablespoons ice water,
  • 8 large apples, peeled and sliced,
  • 1/2 cup brown sugar,
  • 1/4 cup butter,
  • 2 tablespoons flour,
  • 1 teaspoon cinnamon,
  • 1/2 teaspoon nutmeg,
  • 1/4 teaspoon salt,
  • 1/2 cup toffee bits,
  • 2 cups whole milk,
  • 4 egg yolks,
  • 1/3 cup granulated sugar,
  • 3 tablespoons cornstarch,
  • 2 teaspoons vanilla extract

Instructions

  • Make pie crust by cutting cold butter into flour and salt. Add ice water gradually until dough forms. Chill 30 minutes.
  • Preheat oven to 425°F. Cook sliced apples with butter, brown sugar, flour, and spices for 5-7 minutes. Stir in toffee bits.
  • Roll out bottom crust, place in pie pan. Add cooled filling, top with second crust, seal edges and cut vents.
  • Bake 15 minutes at 425°F, then reduce to 350°F and bake 35-40 minutes until golden.
  • Make custard by whisking egg yolks with sugar. Heat milk, gradually whisk into yolks. Cook until thickened, strain, add vanilla.
  • Serve warm pie with chilled vanilla custard.
