Truffle Parmesan Potato Chips

- 2 large russet potatoes
- 2 tbsp truffle oil
- 1/4 cup freshly grated Parmesan cheese
- 1 tsp sea salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tbsp chopped fresh parsley (optional)
- Vegetable oil, for frying
- 1. Scrub and thinly slice potatoes using a mandoline or sharp knife.
- 2. Soak slices in cold water for 30 minutes to remove excess starch.
- 3. Drain and pat dry thoroughly with paper towels.
- 4. Heat vegetable oil in a large pot to 350°F (175°C).
- 5. Fry potato slices in batches until golden and crisp, about 3–4 minutes.
- 6. Remove and drain on paper towels.
- 7. Toss warm chips with truffle oil, Parmesan, salt, pepper, and garlic powder.
- 8. Garnish with parsley and serve immediately.
Notes
- Use white or black truffle oil depending on your preference.
- For a lighter version, bake chips at 400°F (200°C) for 20–25 minutes, flipping halfway.
- Best enjoyed fresh but can be stored in an airtight container for up to 2 days.
