- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 cups turkey drippings or low-sodium turkey/chicken stock
- 1/2 tsp salt (to taste)
- 1/2 tsp black pepper
- Optional: 1-2 tsp fresh herbs (parsley, thyme, or sage), chopped
- 1. Pour turkey drippings into a measuring cup, skim off excess fat, and reserve 2 cups.
- 2. In a saucepan over medium heat, melt butter.
- 3. Whisk in flour to form a smooth roux; cook, whisking, for 2-3 minutes until lightly golden.
- 4. Gradually whisk in turkey drippings or stock until smooth.
- 5. Bring to a simmer, whisking frequently, until thickened, about 5-7 minutes.
- 6. Season with salt, pepper, and fresh herbs to taste.
- 7. Strain if desired for extra smoothness and serve warm.
Notes
- For extra flavor, add a splash of white wine when making the roux.
- Adjust thickness by adding more stock for thinner gravy or simmering longer for thicker gravy.
- Gravy can be made ahead and reheated gently before serving.
- If turkey drippings are salty, reduce added salt.
