Tuscan White Bean Soup

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken or vegetable broth
  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery; sauté until softened.
  • 2. Add broth, white beans, rosemary, and thyme.
  • 3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 4. Season with salt and pepper.
  • 5. Use an immersion blender to blend half the soup for a creamy texture, or leave whole.
  • 6. Stir in Parmesan cheese.
  • 7. Serve hot, garnished with fresh parsley.
