Vanilla Bean Brown Butter Cheesecake

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, browned
  • 1/4 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 vanilla bean, seeds scraped
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by mixing graham cracker crumbs, browned butter, and sugar until the mixture resembles wet sand. Press into the bottom of a springform pan.
  3. Beat the softened cream cheese and sugar together until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Incorporate the vanilla extract and scraped seeds from the vanilla bean.
  6. Blend in the sour cream until the mixture is smooth.
  7. Pour the cheesecake filling over the crust in the springform pan.
  8. Bake in the oven for 50-60 minutes, until the edges are set and the center is slightly jiggly.
  9. Cool the cheesecake in the pan for an hour, then refrigerate for at least 4 hours or overnight.
  10. Serve chilled, cutting into wedges as desired.

Serve plain or with toppings like whipped cream or fruit. For extended storage, freeze the cheesecake wrapped tightly.
