- 3 lb Yukon gold potatoes peeled cubed
- 3 large yellow onions thinly sliced
- 3 tbsp olive oil
- 4 garlic cloves peeled
- 1/2 cup oat milk warm
- 1/4 cup vegan butter
- 2 tsp fresh thyme leaves
- 1 1/2 tsp salt divided
- 1/2 tsp black pepper
- 2 tbsp nutritional yeast optional
- 1. Heat olive oil in wide skillet over medium. Add onions and 1/2 tsp salt. Cook 30-35 minutes stirring occasionally until deep golden.
- 2. Meanwhile boil potatoes and garlic in salted water 15-20 minutes until fork tender. Drain well.
- 3. Warm oat milk. Mash potatoes and garlic with vegan butter, warm milk, remaining salt, pepper, thyme, and nutritional yeast.
- 4. Fold in half caramelized onions. Top with remaining onions.
