  • 3 lb Yukon gold potatoes peeled cubed
  • 3 large yellow onions thinly sliced
  • 3 tbsp olive oil
  • 4 garlic cloves peeled
  • 1/2 cup oat milk warm
  • 1/4 cup vegan butter
  • 2 tsp fresh thyme leaves
  • 1 1/2 tsp salt divided
  • 1/2 tsp black pepper
  • 2 tbsp nutritional yeast optional

Instructions

  • 1. Heat olive oil in wide skillet over medium. Add onions and 1/2 tsp salt. Cook 30-35 minutes stirring occasionally until deep golden.
  • 2. Meanwhile boil potatoes and garlic in salted water 15-20 minutes until fork tender. Drain well.
  • 3. Warm oat milk. Mash potatoes and garlic with vegan butter, warm milk, remaining salt, pepper, thyme, and nutritional yeast.
  • 4. Fold in half caramelized onions. Top with remaining onions.
