  • 3 garlic cloves, minced
  • 2 tbsp fresh ginger, grated
  • 5 large carrots, peeled and sliced
  • 4 cups vegetable broth
  • 1/2 tsp turmeric
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup coconut milk (optional, for creaminess)
  • Fresh cilantro or parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, garlic, and ginger; sauté until soft and fragrant.
  • 3. Stir in turmeric, cumin, salt, and pepper.
  • 4. Add carrots and vegetable broth.
  • 5. Bring to a boil, then reduce heat and simmer 20–25 minutes or until carrots are tender.
  • 6. Blend soup using an immersion blender or in batches until smooth.
  • 7. Stir in coconut milk if desired.
