White Bean Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • Juice of 1 lemon

Instructions

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add onion, carrots, celery, and garlic; sauté until softened.
  • 3. Add broth, white beans, thyme, and bay leaf.
  • 4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 5. Remove bay leaf.
  • 6. Add kale or spinach and cook for another 5 minutes.
  • 7. Stir in lemon juice and season with salt and pepper.
  • 8. Serve hot.
