- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- Juice of 1 lemon
- 1. Heat olive oil in a large pot over medium heat.
- 2. Add onion, carrots, celery, and garlic; sauté until softened.
- 3. Add broth, white beans, thyme, and bay leaf.
- 4. Bring to a boil, then reduce heat and simmer for 20 minutes.
- 5. Remove bay leaf.
- 6. Add kale or spinach and cook for another 5 minutes.
- 7. Stir in lemon juice and season with salt and pepper.
- 8. Serve hot.
