Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 8 oz mixed wild mushrooms, sliced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 cups kale, chopped
  • 1/2 cup dry white wine (optional)
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh parsley for garnish

Instructions

  • 1. Heat olive oil in a large pot over medium heat. Add onions and cook slowly, stirring often, until caramelized, about 20-25 minutes.
  • 2. Add butter, garlic, and mushrooms; cook until mushrooms are browned and tender.
  • 3. Pour in white wine, cook until mostly evaporated.
  • 4. Add vegetable broth, kale, thyme, salt, and pepper.
  • 5. Simmer for 15-20 minutes until kale is tender.
  • 6. Adjust seasoning to taste.
  • 7. Serve hot, garnished with fresh parsley.

Notes

  • Use a mix of shiitake, cremini, oyster, or chanterelle mushrooms.
  • Skip wine for a non-alcoholic version.
  • Add a splash of cream for richness if desired.
