1/2 lb ground chicken
1 green onion, finely chopped
1 tsp soy sauce
1 tsp sesame oil
1/2 tsp grated ginger
1 garlic clove, minced
1/4 tsp white pepper
30–35 wonton wrappers
Soup:
6 cups chicken broth
1 tbsp soy sauce
1 tsp sesame oil
1/2 tsp grated ginger
1 garlic clove, lightly smashed
Green onions, sliced (for garnish)
Optional: bok choy or spinach
Instructions
1. In a bowl, mix ground chicken, green onion, soy sauce, sesame oil, ginger, garlic, and white pepper until combined.
2. Place 1 teaspoon filling in the center of each wonton wrapper.
3. Moisten edges with water, fold into triangles, and seal, bringing corners together.
4. Bring a pot of water to a gentle boil and cook wontons in batches for 3–4 minutes until they float.
5. Meanwhile, heat chicken broth in another pot with soy sauce, sesame oil, ginger, and garlic.
6. Remove garlic and ginger from broth.
7. Add cooked wontons to the broth and simmer 1–2 minutes.
8. Add greens if using and cook until wilted.
9. Serve hot, garnished with green onions.
Notes
Freeze uncooked wontons for later use.
Use shrimp or chicken filling for variation.
Add chili oil for a spicy finish.
