Instructions

  1. Cook the orzo pasta in salted water according to package instructions (8-10 minutes), then drain and rinse with cold water.
  2. Prepare the vegetables by dicing the cucumber, halving the cherry tomatoes, and chopping the red onion and parsley.
  3. Combine the cooked orzo, diced cucumber, halved cherry tomatoes, finely chopped red onion, and chopped parsley in a large mixing bowl.
  4. Make the dressing by whisking together lemon juice, olive oil, salt, and pepper in a small bowl.
  5. Dress the salad by pouring the dressing over the mixture and tossing gently to coat.
  6. Serve immediately or chill in the refrigerator for about 30 minutes for enhanced flavor.

Notes
