Zucchini Stir Fry

A quick and healthy stir fry featuring fresh zucchini, bell peppers, carrots, and your choice of protein, making it perfect for busy weeknights.

Ingredients

  • 2 Zucchini, cut into strips
  • 2 Carrots, cut into strips
  • 1 Bell pepper, cut into strips
  • 200g Tofu, or Shrimp/Chicken
  • 3 tablespoons Soy sauce
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 2 tablespoons Vegetable oil
  • Sesame seeds (optional)

Instructions

  1. Prepare the vegetables by cutting zucchini, carrots, and bell peppers into strips.
  2. Heat vegetable oil in a large pan or wok over medium heat.
  3. Add minced garlic and grated ginger to the pan and sauté for about 1 minute until fragrant.
  4. Introduce the carrots and bell peppers and stir fry for about 3-4 minutes until tender yet crunchy.
  5. Add zucchini and tofu (or shrimp/chicken) and stir fry for an additional 4-5 minutes until fully cooked.
  6. Pour soy sauce into the stir fry, mix well, and cook for an additional minute.
  7. Serve hot, garnished with sesame seeds if desired.

Notes

Can be served with rice, quinoa, or noodles. Garnish with fresh herbs for added flavor.
