Apple Quinoa Salad

A delightful and healthy salad combining fresh apples, wholesome quinoa, and crunchy walnuts, perfect for lunch or as a side dish.

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 2 apples, diced
  • 1/2 cup walnuts, chopped
  • 1/2 cup cranberries
  • 1/4 cup green onions, sliced
  • 1/4 cup feta cheese (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the quinoa: Rinse 1 cup of quinoa under cold water, combine with 2 cups of water in a saucepan, bring to a boil, reduce heat, cover, and simmer for about 15 minutes.
  2. Prepare the ingredients: Dice apples, chop walnuts, slice green onions, and gather cranberries. Crumble feta cheese if using.
  3. Combine the salad: In a large bowl, combine cooled quinoa, diced apples, walnuts, cranberries, green onions, and feta cheese.
  4. Make the dressing: Whisk together olive oil and lemon juice in a small bowl, add salt and pepper.
  5. Dress the salad: Pour dressing over the quinoa mixture and toss gently.
  6. Serve the salad chilled or at room temperature, best enjoyed fresh.

Notes

Store leftovers in an airtight container for 3-4 days; toss before serving.
