  • 3 tbsp olive oil
  • 1 tbsp sea salt (or 1 tsp for less salt)
  • ½ tsp black pepper
  • 1 tbsp garlic powder

  • 1 tbsp smoked or sweet paprika
  • 1 tbsp dry mustard (optional)

Instructions

  4. Add the olive oil to the spice mixture and blend thoroughly.
  5. Allow chicken legs to come to room temperature for 10-15 minutes.
  6. Coat each chicken leg thoroughly with the seasoning oil mixture.
  7. Arrange the coated chicken legs in a single layer on the prepared baking sheet.
  8. Bake the chicken legs for 30 minutes in the preheated oven.
  9. Check for crispiness and brush with oil from the tray, then bake for an additional 5 to 10 minutes.
  10. Check the internal temperature; it should reach at least 165 degrees Fahrenheit (74 degrees Celsius).

Notes

For deeper flavor, marinate the chicken legs in the seasoning oil for a few hours or overnight before baking. You can also use a wire rack to promote even cooking and crispiness.
