Beef Enchilada Casserole

A delightful dish combining the bold flavors of traditional enchiladas with the convenience of a baked casserole, featuring seasoned beef, beans, corn, and cheese.

  • 1 lb ground beef
  • 1 can (15 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas, cut into strips
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef over medium heat until browned, then drain excess fat.
  3. Mix in the enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper. Heat through.
  4. Layer half of the tortilla strips in a greased 9×13 inch baking dish, followed by half of the beef mixture and half of the shredded cheese.
  5. Repeat the layers with the remaining tortilla strips, beef mixture, and finish with cheese.
  6. Cover with foil and bake for 20 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

Serve with toppings such as sour cream, diced avocado, or fresh cilantro for enhanced flavor.
