  • 1 pound beef (chuck or brisket), cut into bite-sized pieces
  • 8 cups beef broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Brown the beef on all sides for about 5-7 minutes.
  3. Add the diced onion, minced garlic, sliced carrots, and chopped celery; cook for about 5 minutes.
  4. Pour in the beef broth and stir in the soy sauce, salt, and pepper; bring to a boil.
  5. Simmer the soup on low for 1.5 to 2 hours.
  6. Cook the egg noodles in the last 10-15 minutes of cooking until al dente.
  7. Serve the soup hot, garnished with fresh parsley.
