Best Zucchini Bread

A delightful zucchini bread that combines the subtle sweetness of zucchini with warm spices for a moist and flavorful loaf, perfect for breakfast or snacking.

  • 2 cups grated zucchini
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans.
  2. In a large bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. In another bowl, combine the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and ground nutmeg.
  4. Gradually add the dry ingredients to the wet mixture and stir gently until just combined.
  5. Divide the batter evenly between the two prepared loaf pans.
  6. Bake for 50-60 minutes, checking for doneness with a toothpick.
  7. Let the loaves cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Notes

Store in a cool, dry place for up to 2-3 days or refrigerate for up to a week. Freezing is also an option; wrap slices and store in a freezer bag for up to 3 months.
