Blackberry Avocado Salad

A vibrant salad featuring fresh blackberries, buttery avocado, and peppery arugula, drizzled with a honey-lemon vinaigrette and topped with goat cheese.

Ingredients

Scale
  • 1 cup fresh blackberries
  • 1 ripe avocado
  • 2 cups spicy arugula
  • 2 tablespoons honey
  • 2 tablespoons lemon juice
  • 1/4 cup crumbled goat cheese
  • 1/4 cup candied pecans
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the ingredients: Wash the blackberries gently and pat dry. Cut avocado in half, remove the pit, and slice into wedges.
  2. Combine the blackberries, avocado, and arugula in a large bowl and toss gently.
  3. Make the vinaigrette by whisking together honey, lemon juice, salt, and pepper in a small bowl.
  4. Dress the salad with the vinaigrette and toss again to coat evenly.
  5. Finish with crumbled goat cheese and candied pecans on top before serving.
  6. Serve immediately for the freshest taste, or store in an airtight container with dressing on the side to maintain freshness.

Notes

Store in an airtight container in the fridge for 1-2 days. Avoid browning avocados by keeping the dressing separate until ready to serve.
