Blueberry Crumble Pie

  • 1 pie dough (homemade or store-bought)
  • 5 cups fresh blueberries (rinsed and patted dry)
  • ½ cup granulated sugar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon ground cinnamon
  • Pinch of all spice
  • 3 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • ¾ cup all-purpose flour
  • ½ cup rolled oats
  • ⅓ cup light brown sugar
  • ⅓ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • ½ cup unsalted butter cut into 1-inch pieces (softened)

Instructions

  1. Creating the perfect pie crust is vital. If homemade, mix flour and salt, cut in butter. Add cold water until dough holds. Wrap and refrigerate for at least an hour.
  2. If using store-bought dough, roll it out and fit it into the pie dish.
  3. To prepare the filling, combine blueberries, sugar, lemon juice, lemon zest, cinnamon, and all spice in a bowl. Toss to coat. Add flour and cornstarch, and mix well.
  4. For the crumble topping, mix flour, oats, brown sugar, granulated sugar, and cinnamon, then work in softened butter until crumbly.
  5. Preheat your oven to 375°F (190°C). If crust is not pre-baked, fill with blueberry mixture and spread evenly. Sprinkle crumble topping generously over blueberries.
  6. Let the pie cool for 10-15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.
