Blueberry–Lemon Curd Tart

A delightful tart combining the tartness of lemons with the sweetness of blueberries, perfect for summer gatherings.

  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • ½ teaspoon pure vanilla extract
  • 1 ¼ cups (158g) all-purpose flour
  • ⅓ cup (38g) confectioners’ sugar
  • ¼ teaspoon kosher salt
  • 8 tablespoons unsalted butter, cut into cubes and chilled
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Pinch of kosher salt
  • 4 tablespoons unsalted butter, cut into 4 pieces and chilled
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. Make the tart dough: Whisk together egg yolk, heavy cream, and vanilla extract in a small bowl.
  2. Combine flour, confectioners’ sugar, and kosher salt in a food processor. Pulse briefly to mix.
  3. Scatter chilled butter cubes over dry ingredients and pulse until resembling coarse cornmeal.
  4. Pour in the egg mixture and process until the dough just comes together.
  5. Shape the dough into a disk, wrap in plastic, and refrigerate for at least 1 hour.
  6. Prepare the tart shell: Let dough sit at room temperature for 10 minutes, roll into an 11-inch circle.
  7. Transfer dough to a 9-inch tart pan and trim excess dough.
  8. Wrap in plastic wrap and freeze for about 30 minutes.
  9. Bake the crust at 375ºF (190ºC) for 30 minutes with pie weights.
  10. Remove weights and foil, let crust cool before adding filling.
  11. Prepare the lemon curd: Combine lemon zest and juice in a saucepan, add eggs, honey, and salt.
  12. Heat mixture over medium-low, stirring until thickened.
  13. Stir in butter and heavy cream until smooth.
  14. Toss blueberries with cornstarch in a bowl.
  15. Pour lemon curd into crust and top with blueberries.
  16. Bake for 15 minutes until filling is just set.
  17. Cool tart completely, then refrigerate for 2 hours before serving.

Notes

Serve with whipped cream or vanilla ice cream and garnish with fresh blueberries or powdered sugar.
