Brown Stew Chicken

A classic Caribbean dish known for its rich flavors and tender meat, perfect for family dinners and gatherings.

Ingredients

  • Chicken pieces
  • Onions
  • Garlic
  • Ginger
  • Bell peppers
  • Thyme
  • Allspice
  • Salt
  • Black pepper
  • Carrots
  • Tomatoes
  • Scotch bonnet pepper
  • Soy sauce
  • Water or chicken broth

Instructions

  1. Marinate the chicken with salt, black pepper, thyme, allspice, and chopped scotch bonnet pepper for at least one hour.
  2. Brown the chicken in a large pot with hot oil for 5-7 minutes and then set aside.
  3. Sauté onions, garlic, ginger, and bell peppers in the same pot for about 5 minutes until softened.
  4. Combine the browned chicken back into the pot with carrots and tomatoes, add soy sauce and enough water or chicken broth to cover.
  5. Cook the mixture, bringing it to a boil then reducing to a simmer for 30-40 minutes until the chicken is tender.
  6. Serve the dish with rice and peas, pouring sauce over the chicken to soak up the flavors.

Notes

Use fresh ingredients for the best flavor. Adjust the spice level by modifying the amount of scotch bonnet pepper used.
