  • 1 cup sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup butterscotch sauce
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup butterscotch buttercream frosting
  • 1/2 cup butterscotch ganache (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake tin with liners.
  2. Cream the softened butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Mix in the butterscotch sauce, milk, and vanilla extract until well combined.
  5. Combine the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Mix the dry ingredients into the wet mixture until just combined.
  7. Fill each cupcake liner about 2/3 full with batter.
  8. Bake for 18-20 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Frost with butterscotch buttercream once completely cool.
  11. Drizzle with butterscotch ganache before serving.
