Cajun Rice

A flavorful blend of spices and fresh vegetables, Cajun Rice is a versatile dish ideal for any meal.

  • 1/3 cup unsalted butter
  • 1/2 red bell pepper (seeded and diced)
  • 1/2 green bell pepper (seeded and diced)
  • 1/2 yellow onion (diced)
  • 3 1/4 cups low-sodium chicken broth
  • 1 1/4 teaspoons Kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground thyme
  • 1 teaspoon ground paprika
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 1 1/2 cups long-grain white rice

Instructions

  1. Melt Butter: Start by placing the unsalted butter in a medium-sized saucepan over medium-high heat. Watch closely to prevent burning.
  2. Add Vegetables: Stir in the diced red and green bell peppers along with the diced yellow onion. Sauté for about 5 to 7 minutes.
  3. Pour in Broth and Spices: Add the chicken broth, Kosher salt, garlic powder, thyme, paprika, black pepper, and bay leaf.
  4. Bring to Boil: Allow the mixture to come to a rolling boil.
  5. Add Rice: Stir in the long-grain white rice and cover the saucepan with a lid.
  6. Simmer: Reduce heat and let it simmer for 20 to 25 minutes.
  7. Rest the Rice: Remove from heat and keep covered for 10 minutes.
  8. Fluff and Serve: Remove the bay leaf and fluff the rice gently with a fork.

Notes

For a richer flavor, consider adding cooked proteins like chicken or shrimp directly into the rice.
