Caramelized Onion Pasta with Chilli Oil: Best 15 Minute Recipe

  • 12 oz pasta (rigatoni, spaghetti, or fettuccine)
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 3 large yellow onions, thinly sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced
  • 1/4 cup pasta cooking water (as needed)
  • 1/4 cup grated Parmesan cheese
  • 12 tbsp chili oil (to taste)
  • Fresh parsley or chives for garnish

Instructions

  • 1. Bring a large pot of salted water to a boil and cook pasta until al dente; reserve pasta water.
  • 2. Heat olive oil and butter in a wide skillet over medium heat.
  • 3. Add sliced onions and salt and cook, stirring occasionally, for 25–30 minutes until deeply caramelized.
  • 4. Add garlic and cook until fragrant.
  • 5. Transfer cooked pasta to the skillet with onions.
  • 6. Add a splash of pasta water and toss to create a silky sauce.
  • 7. Stir in Parmesan cheese until melted.
  • 8. Finish with chili oil and black pepper.
  • 9. Garnish with herbs and serve immediately.

Notes

  • Low and slow cooking gives the best caramelized onions.
  • Add a splash of cream for a richer sauce.
  • Top with a fried egg for extra indulgence.
