Carnitas Burrito Bowls

Delicious and filling meal option with slow-cooked carnitas, fresh vegetables, and customizable toppings.

Ingredients

  • 2 lbs pork shoulder or pre-made carnitas
  • 2 cups brown rice or cauliflower rice
  • 1 can black beans
  • 1 cup corn
  • 1 cup salsa
  • 1 cup guacamole
  • 1 lime
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp salt
  • 2 bell peppers, chopped
  • 1 onion, chopped

Instructions

  1. Prepare the Carnitas: Season the pork shoulder with cumin, chili powder, and salt. Slow cook it for 6 to 8 hours until tender or heat pre-made carnitas until warm.
  2. Cook the Rice: Prepare brown rice according to the package or sauté cauliflower rice in olive oil for 5 to 7 minutes.
  3. Sauté the Vegetables: Heat oil in a pan, add bell peppers and onions, and stir-fry for 5 to 7 minutes until softened.
  4. Assemble the Bowl: Layer cooked rice, black beans, corn, shredded carnitas, sautéed vegetables, salsa, and guacamole in a large bowl.
  5. Finish with Lime: Squeeze fresh lime juice over the bowl for added flavor.

Notes

Serve warm and feel free to customize toppings. Store leftovers in airtight containers for up to 3-4 days.
