Ingredients

  • Cheese tortellini
  • Italian dressing
  • Cherry tomatoes
  • Cucumber
  • Red onion
  • Bell pepper
  • Fresh basil

  • Pepper

Instructions

  1. Cook the cheese tortellini in a pot of salted boiling water for 3-5 minutes until they float. Drain and let cool.
  2. Prep the vegetables: slice cherry tomatoes, dice cucumber, chop red onion, and cut bell pepper into bite-sized pieces.
  3. Combine the cooled tortellini with halved cherry tomatoes, diced cucumber, chopped red onion, and diced bell pepper in a large bowl.
  4. Add the Italian dressing and mix well until coated.
  5. Season with salt and pepper according to taste.
