Chicken and Rice Casserole

A warm and comforting dish that combines tender chicken, fluffy rice, and creamy soup, perfect for busy weeknights or family gatherings.

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper in a large bowl. Mix well.
  3. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  4. Cover the dish tightly with aluminum foil.
  5. Bake in the preheated oven for 45 minutes.
  6. Remove the foil carefully and sprinkle shredded cheese over the top.
  7. Return the dish to the oven and bake uncovered for an additional 15 minutes.
  8. Let the casserole cool for a few minutes before serving.

Notes

For a healthier version, consider using brown rice or adding more vegetables for added nutrition.
